This loaf is a spiced up version of the humble carrot cake with ginger, cinnamon and allspice.
100g brown sugar
1 1/2 tsp ginger powder
1/2 tsp cinnamon
1/2 tsp allspice
3/4 tsp baking powder
50ml vegetable oil
1-2 apples, diced into small cubes
1/2 grated carrot
Step 1. Preheat the oven to 180 degrees Celsius.
Step 2. Line an 8x4 inch loaf tin (or similar size cake tin/tray) with baking paper. Set aside.
Step 3. Combine all ingredients in a large bowl. Mix with a wooden spoon until well combined.
Step 4. Pour the mixture into the loaf tin, bake for 30 minutes.
