Affectionately called 'cake hug' because this recipe has been used over the years to bake for people in need of a little TLC. Simple and sweet, this cake is perfect as a Christmas gift or to share with friends and family during the festive season.
Ingredients
250g butter (room temperature), chopped into small pieces
4 cups self-raising flour
2 1/2 cups sugar
1 tsp bicarbonate of soda
4 eggs
2 cups milk
2 teaspoons vanilla extract
Cinnamon sugar for sprinkling
Cooking Method
Step 1. Preheat oven to 180C
Step 2. Combine all ingredients, except cinnamon sugar, in bowl of mixer.
Step 3. Beat for 5 minutes.
Step 4. Bake for 40 minutes or until the skewer comes out clean.
Step 5. As soon as it comes out of the oven, sprinkle liberally with cinnamon sugar.
