This delicious blend of vegetables and apple is the perfect winter warmer.
Ingredients
30g butter or extra virgin olive oil
1 large onion, peeled and roughly diced
2 cloves garlic, peeled and sliced
2 long sticks celery, cut into pieces
2 medium sized potatoes peeled and diced
1 small sweet potato peeled and diced
2 small or 1 large Granny Smith apple peeled and diced
1½ cups chicken bone broth or stock (or vegetable stock)
Sea salt and black pepper to taste
¼ cup milk
Cooking Method
Step 1. In a large pot add the butter or oil with the onion, garlic and celery. Sauté over a low to medium heat for 5 minutes or until the onion starts to soften.
Step 2. Add the potatoes, sweet potato, apples and broth or stock. Season with salt and pepper and bring to a high simmer. Cook until the potato is soft and falls apart when skewered with a knife or fork.
Step 3. Allow to cool a little, add the milk and blend using a stick blender, blender or food processor until smooth and creamy.
