This one pot wonder is a quick, easy and nourishing meat-free recipe. Serve it with brown rice or quinoa for a nutritionally balanced meal.
Ingredients
1 large onion, peeled and diced
1 large carrot, grated
2 large cloves of garlic, crushed
2-3 cm ginger, peeled and finely diced
2 stems of celery, diced
2 potatoes, peeled and diced
1 teaspoon cumin seeds, whole
1 teaspoon cumin seeds, ground
2 teaspoon mustard seeds
2 teaspoon garam masala powder
350g tomatoes, roughly chopped or can of diced tomatoes
200g or 1 cup of red lentils, rinsed well
400g coconut milk
350mls of water
Pinch of sea salt
Black pepper to taste
Dried chilli to taste (optional)
Bunch of coriander, chopped (optional)
Cooking Method
Step 1. In a medium-sized pot, over a low to moderate heat, add a little butter or oil.
Step 2. Saute the onion, garlic, ginger and spices for two minutes.
Step 3. Add the grated carrot, celery, potatoes, spices, tomatoes, lentils, coconut milk and water.
Step 4. Season well with the salt and pepper, stir and leave to simmer for 20 minutes or until the lentils are cooked and most of the moisture is absorbed.
Step 5. Taste and season again if necessary.
Step 6. Finish with coriander leaves.
Step 7. Serve with brown rice, quinoa or even toast!
