Ingredients
1 tablespoon olive oil
1/2 large onion, chopped
3 cloves garlic, minced
2 celery stems, chopped
2 carrots, sliced
2 cups mixed chopped vegetables, your choice (we recommend potato, cauliflower, zucchini or green beans)
1/2 teaspoon salt
1 teaspoon thyme
1 teaspoon oregano
400g canned tomatoes
8 cups of water and 2 cubes of vegetable stock
You can add extra ingredients such as pre-cooked chicken, tinned beans or pasta (add at Step 4)
Cooking Method
Step 1. Heat oil on medium heat in a large soup or stock pot. Add the chopped onion, garlic, carrots and celery. Heat, stirring for 3-4 minutes, until onions are soft. Add the rest of the vegetables and heat for another minute or two.
Step 2. Add salt, thyme and oregano, stirring to coat the vegetables well.
Step 3. Add water with stock cubes and bring to a simmer.
Step 4. Add tomatoes and allow your vegetable soup to simmer until all the vegetables are cooked, about 8-12 minutes.
Step 5. Adjust seasoning to taste.
Step 6. Serve the vegetable soup with bread or toast.
