This winter-warming soup is a mid-week classic, perfect for winter nights.
1 kg zucchini
2 onions, diced
2 potatoes, cubed
2 carrots, diced
50 g butter
4 cups stock (any)
Salt and Pepper
Step 1. Melt butter in large pot.
Step 2. Add all vegetables. Coat vegetables with the butter stirring constantly.
Step 3. Season with salt and pepper to taste. Stir to combine.
Step 4. Add stock. Simmer until vegetables are soft.
Step 5. Cool slightly. Blend until smooth.
