4 lamb shanks
2 carrots, diced
2 stalks celery, diced
1 parsnip, diced
1 leek, chopped
1 large sweet potato, diced
3/4 cup barley, rinsed
3 litres (12 cups) beef stock
Step 1. Place all ingredients in a large pot and bring to the boil.
Step 2. reduce heat, cover and simmer for 2-3 hours
Step 3. Remove shanks and cut meat into small pieces. Return meat to soup.
Step 4. Season with salt and pepper.
