Potato & Zucchini Rostis

This will be your favourite recipe for breakfast, lunch and dinner! Why not try these rostis with a fried egg for brekkie or with a crunchy coleslaw salad for an easy dinner?

Ingredients

2 potatoes

1/2 brown onion, finely diced

1 egg

1 cup grated zucchini

1 egg

2 tbsp flour

1/2 tsp salt

1/2 tsp pepper

1/2 tsp paprika

Cooking Method

Step 1. Grate the zucchini and potatoes. Lay the grated vegetables flat on a clean tea towel or cloth, roll up and squeeze to remove excess liquid.

Step 2. In a medium bowl, add the potato and zucchini, flour, egg, salt, pepper and paprika and mix with a wooden spoon to combine.

Step 3. With your hands, roll 1/2 cup of the mix into a small ball, then lightly flatten into a patty shape. Repeat with the remaining mixture.

Step 4. Heat a pan on medium-high heat (if your pan isn't non-stick, then you may need to add a 1/2 tsp vegetable/canola or olive oil). Place the rostis (about four at a time) into the pan and cook for 3-4 minutes.
